Chicken Casserole Recipe


I made this casserole from things I had on hand and it was great! No leftovers and all were satisfied. I thought I would share it… like I said, it was born out of leftovers and a way to use them, in this instance, chicken, and it is not hard either! Let me know if you try it!

Chicken Casserole

You will need the following:

Box of chicken stuffing

mashed potatoes of your choice

chicken meat (de-boned)

2 cans of cream of mushroom soup

Make the stuffing according to the directions on the box. Make the mashed potatoes like the instructions say. Chicken that is cooked and boneless, you can either cut into bite size pieces or shred, it is up to you.

In a 13x9x2 casserole dish, cover the bottom with stuffing. Use all the stuffing. Next layer on the stuffing the mashed potatoes, followed by the chicken. Open two cans of cream of mushroom soup and spread out on top of the chicken. If you want to thin it some, you can put it into a bowl and stir in half a cup of milk. Cover the casserole dish and either freeze for a future meal or place in a 325 degree oven for 30 minutes. If frozen, take out and put in refridgerator the day before so it will thaw, then follow the directions above. Enjoy!
